As I said, right now Joomdle does not support the item table for profile mappings, and I don't think we should: values in that table are related to user/course, not only user , like profile, so I don't see how anyone else would benefit from that.
What you want to do is a very special case: selling individual lessons.
I don't know if the method you propose is the best one (I don't really fully understand it), but it is something that would need to be custom developed for you.
Maybe there is a better way to sell individual lessons, using Moodle's activity locking features.
